Storage: Keep frozen in airtight container until ready to use. Store unused defrosted portions covered in brine in refrigerator (brine: 1/8tsp table salt to 1c water). Will keep for 2-3 weeks in the refrigerator, though flavor will sharpen over time.
Serving: Keep cold until serving, as this is a soft formed cheese. Slice and use like a buffalo-style mozzarella. Can be used in cooking applications for a creamy, melted cheese.
