Storage: Keep refrigerated, wrapped in plastic wrap and stored in an airtight container. Will keep for 2 weeks in the refrigerator, at which time it will continue to keep, but will sharpen in flavor. This cheese has kept for a couple of months, just maturing in flavor! It can also be stored in the freezer for up to 4 months to halt the maturing process.
Serving: Keep cold until serving, as this is a soft formed cheese.
